Traditional Preparation of Guacamole

Have you ever wondered how to make Guacamole taste truly authentic? There are many unique variations throughout Mexico. Have your Guacamole as a small meal, or as an appetizer with tortilla chips. Place on top of: Enchiladas, Tacos, Gorditas, Quesadillas or inside a Torta sandwich.

Authentic Guacamole for Tortilla Chips and Mexican Meals


Four large high quality avocados slightly soft

One large white or red onion

Juice of one large lemon or three limes

Two large Serrano green peppers or one green fresh Jalapeno pepper

One cup cilantro minced or flat leaf parsley minced

One cup diced cherry tomatoes or Roma tomatoes

Two garlic cloves minced

One teaspoon Kosher style salt

1/2 teaspoon cracked black pepper


1) On a clean cutting surface peel and dice your avocados. Place the avocado in a non reactive bowl and immediately squeeze the lemon juice on to it after straining the seeds.

2) Dice the tomatoes and wash and mince your herbs. Peel and mince the garlic. Wash and pat dry the peppers. (Remove the white inner portion and the seeds.) Mince the peppers.

3) Add all these ingredients and fold together in a non reactive bowl. With a fork or potato masher, mash your avocado. You may also use a mortar and pestle.

4) Cover and chill for at least 14 minutes with foil or plastic wrap.
