Delicious Lemon Bars from Scratch
For the Crust
One half cup butter at room temperature
One quarter cup confectioners sugar (powdered)
One cup all purpose flour
One half teaspoon salt
For the Lemon Filling
Zest of one large lemon
One cup granulated sugar
Three Tablespoons fresh lemon juice
Three Tablespoons all purpose flour
One half teaspoon baking powder
Two large eggs
1. Lightly grease an eight or nine inch square baking pan. Preheat your oven to three hundred fifty degrees Fahrenheit.
2. In a mixing bowl mix together the butter and powdered sugar slowly until creamed using a hand mixer or standard mixer. Next add the flour and salt slowly until lightly combined. Press this mixture into your pan.
3. In a second bowl add the sugar, and lemon zest, mix well. Add your lemon juice, flour, baking powder and large eggs mixing until the sugar is totally dissolved in the wet ingredients. Pour this mixture over your crust layer.
4. Bake your lemon squares at three hundred fifty degrees Fahrenheit for twenty minutes or until the filling has a set shiny consistency.
Let bars cool, then cut and sprinkle with additional powdered sugar if desired.
