Recipe For Mediterranean Greek Beans in Tomato Sauce

Ingredients

One pound green beans

Twenty eight ounces grated fresh Roma tomatoes

3/4 of a cup extra virgin olive oil

Three large cloves minced garlic

One medium yellow onion

One teaspoon sugar

One teaspoon Kosher salt

1/2 teaspoon ground black pepper

1/4 cup minced parsley

1/8 cup minced mint or basil

Garnish Options

Shaved Kefalograviera, Parmesan Cheese,

Soft Feta or Slivered Almonds

Method

1) Thoroughly scrub and drain green beans in a strainer. Cut off any tough stems and cut into one and a half inch pieces.

2) In a pan with high sides heat half of the oil. Chop the onion and saute until translucent. Add the cloves of minced garlic for 30 seconds more and turn off heat.

3) Add the grated tomato and the second portion of the oil. Add the salt, and pepper. Bring almost to a boil and then reduce the heat to medium low. Cover the pot except for a small slit and simmer the beans for 40 to 45 minutes. After about 30 minutes add the herbs.
