There are many delicious ways to have a healthy vegetarian breakfast or lunch in Israel. One such way is a Falafel Entree with Jerusalem or Tabouli Salad. Don't forget some other condiments such as drizzled Tahini Lemon Sauce, or Pickled Turnips or Onions.
Falafel Bean Vegetarian Entree
Ingredients
Two cups dried soaked Garbanzo Beans (Chickpeas)
One large Yellow Onion minced
1/2 cup Flat Leaf Parsley
Six cloves of minced Garlic
Juice of one small Lemon
1 teaspoon Kosher Salt
1/2 teaspoon Lemon Juice
1/2 teaspoon ground Cardamom
1/2 teaspoon ground Cinnamon
1 teaspoon Cumin ground
1/4 teaspoon ground Clove
1/4 teaspoon ground Cayenne Pepper
One teaspoon Baking Powder
Four tablespoons or more to taste All Purpose Flour
Two Egg Whites beaten (optional)
Canola or Vegetable Oil for frying
Method
The night before: Soak the two cups of beans in cold water making sure you have a few inches of water over the beans.
In a blender or food processor the next morning:
1) Combine the: Beans, Lemon Juice, minced Garlic, Onion, Parsley and Olive Oil. Grind to combine but the mixture should look like gravel, not smooth.
2) Place in a small bowl. Mix in the Flour, and the Baking Powder. Cover the bowl with plastic wrap and let chill for one to two hours.
3) In a large pan or pot, fill halfway with oil and heat to bubbling. Form balls with wet soup spoons about one and a half centimeters in diameter. Drop in the hot oil.
4) Fry until golden brown five to six minutes total. Pull out with a slotted spoon or tongs and let rest on paper towels.
To assemble the sandwiches place a little Hummus or Baba Ganouj on the bottom of each half of a warm Pita Flatbread. Place the Falafel balls or patties on top. Add Tahini or Cucumber Yogurt Salad or Jerusalem Salad. On the top place some pickled Turnips, or pickled Hot Peppers and some Schug or Harissa style hot sauce.
