How to Make Israeli Style Cucumber Yogurt Salad

Israeli Cucumber Tomato Herb Salad
Three medium cucumbers in small dice
Four medium tomatoes in small dice
One half a cup minced mint or fresh basil
One half cup whole milk
One half cup plain yogurt
Three large cloves minced garlic
One teaspoon fresh oregano
One teaspoon Kosher salt
1/2 teaspoon sweet paprika
1/2 teaspoon ground white pepper
1/2 teaspoon ground cardamom
1/8 cup lemon juice
1/8 cup canola oil
1) In a large non reactive bowl place the finely chopped tomatoes, and cucumber. Sprinkle the salt, pepper, cardomom, and paprika over the top. In a smaller bowl mix the oil with the lemon juice. Pour over the mixture and mix to combine.
2) In another small bowl combine the milk and yogurt until smooth. Add the herbs and the minced garlic as well as an additional dash of the salt and pepper.
3) Fold in gently the yogurt mixture. Drizzle the top with a tiny bit of oil and some additional minced herbs.
Serve as part of an Israeli style breakfast with Falafel, Tahini, Hummus and warm Pita bread.
