How to Make Soutzoukakia Meatballs

Souzoukakia Greek Meatballs in Fresh Tomato Sauce

Ingredients for the Meatballs

One and a half to two pounds ground beef

One large yellow or white onion minced

Six medium cloves of garlic minced

Two large eggs beaten well

The juice of one large lemon

One teaspoon ground cumin

One teaspoon ground cardamom

1/2 a teaspoon cinnamon

1/4 cup minced parsley

1/8 cup extra virgin olive oil

Ingredients for the Tomato Sauce

Four cups of crushed tomatoes

One cup Kretikos red wine or Cabernet Sauvignon red

Two large cloves garlic minced

One tablespoon tomato paste

Two large garlic cloves minced

1/8 cup extra virgin olive oil

1/4 cup minced parsley

1/2 teaspoon kosher salt

1/2 teaspoon ground black pepper

1/2 teaspoon ground cardamom

One fresh or dried bay leaf minced


1) Beat the eggs well and add all of the other ingredients to the meat and mix well with a fork or clean hands. Chill covered for fifteen minutes.

2) To prepare the tomato sauce combine all of the ingredients in a wide bottomed soup pot. Bring to a boil and then simmer for fifteen minutes. Form the meat mixture into ball or sausage shapes. Simmer with the top vented for another fifteen.

Serve with linguine or white rice.
