New York Strip Steak Medallions

Ingredients

One Steak Per Person of One Inch Thickness

One Tablespoon of Butter Per Steak

Cracked Black or Pink Pepper To Taste

Kosher Salt to Taste

One Tablespoon Sweet Paprika

Two Teaspoons Ground Cardamom (optional)

1/8 Cup Chopped Flat Leaf Parsley

Three to Four Garlic Cloves Minced

Juice of one Lemon

Method

1) Clean and oil the grill and bring the center of the grill to a high heat, leaving the edges at a medium low heat.

2) Place all the ingredients evenly over the steaks.

3) Sear the steaks for three minutes, and flip for another three minutes on the second side.

4) Remove the steaks from the high heat to a medium low part of the grill.

5) Cook for three minutes, flip and repeat. Remove to a plate and keep covered serving immediately.

Excellent with baked potatoes, potato salad, and a freshly prepared salad.
