How To Make Fresh Whitefish Fillet in Lemon Butter Sauce

Ingredients
Two pounds whitefish fillets
Juice of three lemons
One stick of unsalted butter melted
One tablespoon sweet Paprika
Two teaspoons Kosher salt
Six cloves minced garlic
1/8 cup extra virgin olive oil
Three Tablespoons fresh oregano
Three Tablespoons fresh basil or mint
One Tablespoon fresh thyme or dill
Method
1) In a nine by thirteen inch pan, place a bit of the olive oil on the bottom. Rinse and pat dry. Place the olive oil remaining evenly over your fillets. Next juice one of the lemons, and add this to the fish on both sides. Sprinkle the Whitefish fillets with the: Paprika, Kosher salt, minced garlic, oregano, basil or mint, and the thyme or dill.
2) Preheat your oven to 375 degrees Fahrenheit. Cook uncovered on the first side for a few minutes, then cover for a total of 10 minutes per side until flaky with a fork.
3) Meanwhile, in a medium saucepan gently melt your butter and combine with the juice of two lemons mixed in. Add 1/2 teaspoon additional Kosher salt and 1/2 teaspoon pepper and 1/2 teaspoon sweet paprika, and two minced garlic cloves. Simmer for five minutes semi covered and set to the side.
4) Keep your fillets hot and covered until serving. Serve each fillet with a bit of the dipping sauce on the side, or in a gravy dish with the fillets all together on a platter family style ladling a bit over each fillet.
