Glazed Ham for a Holiday Gathering
Ingredients
One 10 pound bone in ham
One cup dried cherries
Two cups cherry juice
One cup water
1/2 cup maple syrup
1/2 cup unsalted clarified butter
One teaspoon ground sweet cinnamon
1/2 teaspoon ground cardamom
1/2 cup pure water
Method
1) Preheat your oven to 325 F. Prepare your baking dish by oiling with Canola or neutral oil and adding a half cup of water to the pan.
2) Wash and pat dry your ham and score the fat covered side in diamond shapes. Season with the melted butter. Sprinkle a bit of Cardamom and Cinnamon to taste. Place smooth side down and cook approximately 15 minutes per pound basting with the liquid. The cook time will be approximately two and a half hours. Make sure the internal temperature is 140 degrees F.
3) In a saucepan boil the two cups of cherry juice with the dried cherries, water, Cinnamon and Cardamom. Reduce to two cups and set to the side. The last thirty minutes of cooking pour the cherry sauce over the ham. Tent with foil if necessary to prevent burning.
Slice and serve immediately with Mashed potatoes, Sweet potatoes, Cranberry sauce, rolls or other accompaniments
