Mexican Hot Chocolate with Whipped Cream
Ingredients
For the Chocolate Base
Two and a half cups whole milk
Three ounces sweetened milk chocolate
For the Dry Mix
Two cups cream
Three Tablespoons cocoa powder
Three Tablespoons granulated sugar
Three Tablespoons all purpose flour
One half teaspoon almond extract
One half teaspoon vanilla extract
One half teaspoon sweet ground cinnamon
Method
1. In a small saucepan melt together the whole milk and the milk chocolate whisking often to make sure there are no lumps.
2. In a small bowl mix together the cocoa powder, sugar, flour and cinnamon. Next in a large saucepan heat the cream and the extracts. Gradually swirl in the dry mixture until smooth. Next pour in the mixture from the top and whisk constantly bringing to a quick boil and then a simmer.
Serve hot and smooth with a Tablespoon or so of your favorite Whipped Cream
